1/2 kg Brinjals
2 onions
4 green chillies
4 dry red chillies
1/2 tsp Mustard seeds
Small lemon size tamarind
1 cup curd
Salt, chilli powder and turmeric as required
5 tsp oil
2 stems curry leaves
1 bunch coriander leaves
1. Wash brinjals and cut into pieces.
2. Chop onions and green chillies.
3. Heat oil in a pan and add red chillies, mustard seeds, curry leaves, green chillies and onions and fry them.
4. Add Salt, chilli powder and turmeric, stir well and fry them.
5. Take juice from tamarind and mix with curd. Add this mixture to brinjals. Cook well.
6. Add chopped coriander leaves, cook for 2 minutes and remove from heat.
