Bitter Gourd fry Popular

4 bittergourd (kakarakaya)
2 onions, chopped
Red chilly powder 1 tsp
Dry coconut powder 1/2 cup
Garlic 2 flakes

For seasoning:
1 tsp Jeera
1 tsp Urad dal
5 Curry leaves
1 red chillies
1 tsp Moong dal
1 tsp Channa dal
Oil for frying

1. First wash and peel off the hard layers on the bitter gourd. Cut them into medium pieces.

2. Put all the pieces in a bowl and add some salt to the pieces. Keep them aside for 5min - By doing so bitter gourd will lose its bitter taste.

3. Fry bitter gourd pieces and onions separately. Make sure that onions were not too crispy after frying.

4. Add coconut powder, red chilly powder, garlic, salt and jeera to the grinder and grind them well.

5. Heat some oil. Then add prepared coconut chilly mixture to the seasoning and stir them well for a little while.

6. Finally add the fried bitter gourd and onions to the above seasoning. Keep them on a very low flame for a while and stir them. Remove from flame. Garnish with curry leaves.
