4 large Baking Potatoes
4 long Green Chillies
4 Garlic cloves
20 Cashew Nuts, Chopped
2 tbsp dried Onion Flakes
1 tbsp vindaloo Paste
1 tbsp minced Red Chilli
1 tbsp Garam Masala
1/2 tsp Salt
1. Wash, dry and peel the potatoes and drill a hole in them lengthwise.

2. Grind garlic cloves, cashewnuts, onion flakes, vindaloo paste, red chillies, garam masala and salt into paste using minimal water to make a thick paste.

3. Preheat the oven to 375F / 109C / Gas 5.

4. Insert chilli in each potato. Coat the potatoes with the paste, and then wrap them quite lightly in kitchen foil.

5. Bake for 1 hour. Check whether they are cooked by piercing skewer (don’t unwrap the foil). Continue baking if needed serve when ready.
