2-3 tsp Urad dal
1 tsp Mustard seeds
3-5 Green chillies
1-3 Red chillies
3-4 (fenugreek seeds)
Pinch turmeric
Pinch Asafoetida
Pinch Turmeric
Little tamarind paste
1. Bake eggplant in oven at 400F for 30-40 minutes until eggplant gets soft.

2. Peel the skin of the eggplant and mash it .

3. Heat oil, add urad dal, mustard seeds, fenugreek seeds, fry until golden brown , add
green and red chillies, asafoetida and remove from heat .

4. Grind eggplant and seasoning adding tamarind paste and cilantro.
