Sweet Tomato Chutney Popular

1 inch ginger root, chopped
2 onions, chopped
6 cloves garlic, chopped
2 lb tomatoes, skinned and chopped
1 1/4 cups vinegar
3/4 cup sugar
1 tbsp raisins
1 tsp ground cardamom
1 tsp salt
1 tsp chilli powder
2 bay leaves
1. Cook the garlic, ginger and onions over a low heat until soft.

2. Add the tomatoes and simmer until the juices start to run.

3. Add the remaining ingredients and stir over a low heat until the chutney thickens. Leave to Cool.

4. Remove the bay leaves and store in an airtight jar.
