1 cup all purpose flour
1/2 tsp salt
3 tsp butter or ghee
1/2 tsp chilli powder
1/4 tsp onion seeds
1 tspn ajwain seeds
1. Mix flour and salt together into a mixing bowl, then rub in butter or ghee until mixture resembles breadcrumbs.

2. Stir in chilli powder, ajwain seeds and onion seeds, then mix in about 1/4 cup water to make soft dough.

3. Roll out dough on a floured surface to a thickness of 1/8 inch.

4. Perforate all over with a fork and cut into 1 inch strips.

5. Cut strips diagonally to make about 30 diamond shapes.

6. Half-fill a deep fry pan with oil and heat. Fry nimki in 2 or 3 batches for 1-2 minutes each, until crisp and golden brown.

7. Drain well and cool and store in a airtight container.
