South Indian Fish curry Popular

Ingredients:
500 gm. any firm fish like cod, pomfret or salmon
1/2 tsp. turmeric
1/2 tsp. cumin seeds
1 inch piece of ginger, grated
3 green chillies, finely chopped (I do not de-seed mine)
2 tbs. cooking oil or ghee
1 large onion (225 gm. approximately), peeled and chopped or grated
2 large tomatoes, chopped into small pieces
Salt to taste.
1 can (250 ml.) coconut milk (not coconut water)
1 tsp. vinegar
2 tbs. fresh coriander leaves, chopped, for garnish (optional)
Instructions:
1. Cut the fish into 2-3 inch pieces.
2. Mix turmeric, cumin, ginger and chillies in a bowl. Keep aside.
3. Heat oil/ghee in a wok or karahi/kadhai.
4. Fry onions until lightly browned.
5. Add tomatoes and the spice mix.
6. Add the salt and one can of coconut milk.
7. Add fish and stir gently to cover the fish with spiced gravy.
8. Add vinegar.
9. Bring to boil and simmer for a few minutes, until the fish is done. Do not overcook.
10. Garnish with coriander leaves.
11. Serve with Boiled Rice.
12. Wedges of fresh lime/lemon and tomatoes can also be served with it, as a garnish or in a separate dish.
