Fish in a Packet Popular

Ingredients:
Four 185-250 g (6-8 oz) fish steaks, such as sea bass, cod or salmon
1-2 fresh or frozen banana leaves, optional
salt and pepper
60 g (2 oz/1 1/4 cups) finely grated fresh coconut
60 g (2 oz) fresh mint, chopped
4 cloves garlic, crushed
1 tsp ground cumin
4 fresh green chillies, seeded and chopped
6 tsp lemon juice
60 ml (2 fl oz/1/4 cup) cider vinegar
1 tbsp vegetable oil
8 dried curry leaves, optional
mint leaves and lemon slices, to garnish
Instructions:
1. Wipe fish steaks and place each in centre of a 30 cm (12 in) square of banana leaf, if using, or foil.
2. Sprinkle fish with salt and pepper.
3. Mix together coconut, mint, garlic, cumin, chillies and lemon juice.
4. Spoon a quarter of mixture over each fish steak.
5. Fold sides of banana leaf or foil over to seal completely.
6. Tie nanana leaf parcels with fine string, if necessary.
7. Pour vinegar, oil and 185 ml (6 fl oz/3/4 cup) water into base of a large steamer, add curry leaves and bring to the boil.
8. Steam parcels for 12-15 minutes or until fish flakes easily.
9. Open parcels and serve, garnished with mint and lemon slices.

Serves 4.
