Carrot and Pistachio Raita Popular

Ingredients:
1/4 cup coarsly chopped pistachio nuts
4 carrots, grated
1/3 cup raisins
1/3 cup boiling water
3/4 cup yogurt
1 tbsp fresh mint, chopped
1/2 tsp chilli powder
1/2 tsp cardamom seeds, crushed
1/2 tsp ground cumin
Salt
Instructions:
1. Put pistachio nuts and raisins in a small bowl and pour over bowling water.

2. Leave to soak for 30 minutes, then drain and dry with paper towel.

3. Put carrots, yogurt, chopped mint, chilli powder, cardamom seeds and cumin in a bowl, season with salt and stir to mix.

4. Chill for 30 minutes.

5. Stir all with 2 tbsp pistachio nuts and raisins into yogurt, then sprinkle remaining on top.

Serve chilled.

Note: You can add almonds instead of pistachio nuts.
