Banana and Nut Raita Popular

2 1/2 cups plain yoghurt
2 tbsp ghee
1/2 tsp mustard seeds
1 tbsp minced peanuts
1/2 green chilli, minced
1/2 tsp cumin seeds
3 firm bananas, thickly sliced
1 tbsp chopped fresh coriander leaves
2 tbsp oil
2 tbsp flaked almonds
1/2 tsp garam masala
1. Beat the yoghurt lightly and place in a serving bowl.

2. Heat the ghee and fry the mustard seeds until they start splutter.

3. Add the peanuts and fry for 1 minute, stirring.

4. Add the chillies and cumin seeds then stir in the bananas.

5. Remove from the heat and stir into the yoghurt with coriander leaves.

6. Heat oil and fry the almonds until golden brown. Drain off excess oil then stir the almonds into the yoghurt.

7. Dry roast the garam masala for a few seconds until darkened then sprinkle over the raita before serving.

Serves 4.
