Ingredients:
2/3 cup red lenthils
1 coriander seeds
1 cup grated coconut
1 tsp mustard seeds
1 tbsp long-grain rice
4 dried red chillies
1/2 tsp asafoetida
225 g green beans, coarsly chopped
2 tbsp peas
1 potato, chopped
1/2 tsp ground turmeric
Salt

Seasoning:

2 tsp oil
1 tsp mustard seeds
1 tsp cumin seeds
1 dried red chilli, halved
3-4 curry leaves
Instructions:
1. Cook the lentils in boiling water for about 1 hour until tender then drain and set aside.

2. Grind the coriander seeds, coconut, mustard seeds, rice, chillies and asafoetida to a paste with a little water then set aside.

3. Place the beans, peas and potato in a pan and just cover with water.

4. Bring to the boil and simmer until tender.

5. Add the lenthils, turmeric, salt and ground paste and simmer over a low heat until the ingredients are well blended.

6. Heat the seasoning oil and fry the seasoning oil and fry the seasoning ingredients until the mustard seeds start splutter.

7. Add to the sambar and simmer for a few minutes.

Serve hot with rice.
