Ingredients:
500 g boned pork, cubed
2 onions, chopped
300 g tomatoes, chopped
1 tbsp coriander seeds
2 tsp cumin seeds
2 tsp mustard seeds
5 black peppercorns
5 cloves
1 in cinnamon stick
1/2 tsp cardamom seeds
5 dried red chillies
1/2 tsp ground turmeric
Salt
5 garlic cloves, chopped
1 1/2 in ginger root, chopped
2/3 cup wine vinegar
5 tbsp oil
1 cup water
For garnishing:
1/2 tsp garam masala
1 tbsp chopped coriander leaves
1 green chilli, chopped
Instructions:
1. Heat a frying pan over a medium heat and fry whole spices until browned.
2. Grind them to a fine powder.
3. Stir in the turmeric and salt to taste.
4. Blend the powder with the garlic, ginger and vinegar to a smooth paste in a blender or food processor.
5. Rub the paste into the meat and leave to marinate overnight.
6. Heat the oil in a heavy-based pan and fry the onions over a medium heat until golden brown.
7. Add the pork and fry for 15 minutes until golden brown.
8. Stir in the tomatoes and fry until all the liquid has been absorbed and the oil appears on the surface.
9. Add the wine vinegar and water, bring to the boil, cover and cook over a medium heat for 40 minutes until the meat is tender.
10. Sprinkle with the garnish ingredients.
Serve hot with rice, chapathis.
