Ingredients:
2 lb boneless pork, cubed
1 onion, chopped
2 green chillies, chopped
1 tsp ground ginger
3 tbsp ghee
4 cloves garlic, crushed
4 cardamoms
1/2" cinnamon stick
4 cloves
Juice of 1 lemon
1 tsp grated lemon rind
1 tsp grated orange rind
1 tsp salt
1 1/4 cups water
2 tbsp chopped fresh coriander leaves

Instructions:
1. Heat the ghee and fry the onion and garlic until brown.

2. Grind the cardamom seeds, cinnamon and cloves and add to the pan with ginger and chillies and fry for 2 minutes, stirring.

3. Add the pork and fry until well browned on all sides.

4. Add the lemon juice, lemon and orange rinds, salt and water, bring to the boil then simmer gently for 1 1/2 hours until the pork is tender.

Serve garnished with the coriander leaves.

Serves 4.
