Ingredients:
250 g/9 oz minced (ground) lamb

3 large garlic cloves

2.5 cm/1 in ginger root

1 egg

2 green chili

2 slices bread, soaked in water for 2 minute then squeezed

30 ml/2 tbsp fresh chopped coriander

5 ml/1 tsp garam masala

5 ml/1 tsp ground roasted cumin

2.5 ml/1/2 tsp ground mace

2.5 ml/1/2 tsp grated nutmeg

2.5 ml/1/2 tsp ground red chili

Oil for basting

Arround 20 or more skewers
Instructions:
1) Add lamb, garlic, ginger, egg and chili in a blender or food processor to blend and make a smooth paste. Mix in the bread and ground spices.

2) Divide the mixture into 20 equal portions and shape into sausages.

3) Apply oil to skewers and push the oiled skewer through each one and shape the meat to a thin, round strip about 3 in long.

4) Rest these skewers on tray (alluminium tray) in a preheated grill and grill until golden brown on all sides, turning occasionally.

Serve hot with meal or at tea.
