2 lb Lamb, cubed
2 tsp Coriander seeds
1 tsp Cumin seeds
2 lb Tomatoes, crushed
14 Garlic cloves, crushed
2" fresh ginger, finely chopped
6 Bay leaves
1/2 tsp Black pepper, ground
1/2 tspCardamon seed
1/2 tsp Cinnamon
1/2 tsp Cloves
2 tsp Mustard seeds, ground
1 tsp turmeric powder
1 tbsp Wine vinegar
2 Onions
2 Potatoes
2 tbsp butter
1. Lightly roast the cumin seeds and coriander seeds by frying with no oil for a minute or so, stirring constantly.
2. Grind these and combine them into a paste with the other spices, the garlic, ginger and the vinegar. Add this to lamb and marinade for few hours.
3. Finely chop the onions and potatoes and saute them for 5 minutes in the butter.
4. Add lamb and spice paste and simmer over low heat for half an hour. The marinating does add a lot of flavor and makes the meat much more tender.

Serve hot with rice or naan.
