2 cups of whole wheat pasta (Penne Rigate or Rotini or any shape you like). I have used Ronzoni Healthy Harvest whole wheat blend pasta.
Onion , chopped 1 cup
Mustard seeds 1/2 tsp
Cumin seeds 1/2 tsp
1 tomato, chopped finely
Vegetable Oil - 2 tbsp
Salt to taste
Cumin powder - 1/8 tsp
Turmeric powder - 1/8 tsp
Red Chili powder - 1/8 tsp
1/2 cup mixed vegetables, chopped and blanched. (optional)
Cilantro - garnish (optional)

•Heat water in a stock pot and add salt. Add pasta and boil till Al Dente. Drain and set aside. Save about a cup of the pasta water used to boil the pasta.
•Heat oil in a pan. Add mustard seeds, cumin seeds and onion. Saute till pink.
•Add turmeric, chili and cumin powders and mix well. Add tomatoes and salt and cook till oil separates. You can add blanched vegetables at this point.
•Add cooked pasta and mix well. Add some pasta water, about 1/4 to 1/2 cup and cook till all the water evaporates. Garnish and serve.
