carrot and egg curry

Ingredients:
2 cups shredded carrot.
3 eggs.
1 onion, chopped
1/2 tsp ginger garlic paste.
1 tsp chilli powder.
pinch turmeric.
1/2 tsp coriander powder
salt as per taste.
few carriender leaves.
2 tsp oil.
Instructions:
1. Heat oil in kadai and add onion.when they turn brown add ginger garlic paste and turmeric.

2. Fry for a min and add the shreeded carrot. Nicely mix and cook with a lid for 5 min. until carrot is cooked.

3. Add chilli powder,salt and coriander powder, fry for few seconds and add eggs scramble them and nicely cook them.

4. mix well and fry for 3 min with out lid. add some corriander leaves at the end. your carrot and egg cury is done.

Enjoy it with rice or roti.
