Egg Malai Masala Popular

Ingredients:
6 eggs
2 onions
1 in giner root
4 green chillies
2 tbsp ghee
1 1/4 cups milk
Salt
1 tbsp fresh coriander leaves, chopped
1/2 tsp garam masala
Instructions:
1. Hard-boil the eggs then shell and halve them.

2. Blend the onions, ginger and chillies to a paste in a blender or food processor.

3. Heat the ghee and fry the paste for 1 minute.

4. Add the eggs and fry until the onion turns pale golden.

5. Add the milk, season with salt and bring to the boil.

6. Add the coriander leaves and simmer, stirring very gently, until the sauce thickens.

7. Sprinkle with gara masala and serve with parathas or roti.

Serves 4.
