3 tsp gelatine powder
2.5 cups milk
8-9 tsp sugar
2 tsp rosewater
Few drops red food coloring

1. Sprinkle gelatine powder over 9 tsp water in a small bowl and leave to soften for 2-3 minutes.
2. Put milk in a seperate saucepan and boil, then add gelatine and stir until dissolved. Stir in sugar and rosewater.
3. Pour the half mixture into a bowl and add few drops red food coloring to color it to a delicate pink and whisk until cool.
4. Wet four 3/4 cup individual moulds and divide pink mixture between them.
5. Chill for about half hour until the mixture is just set but still sticky on top.
6. Keep the remaining white mixture in a warm place.
7. Whisk white mixture until frothy and pour into moulds on top of pink mixtures.
8. Chill until set, then dip moulds in hot water for 2-3 seconds and turn out on plates.

Serve cold.
