Apricot Pudding Popular

1/2 pound dred apricots
4 large eggs, beaten
5 cups milk
1 tsp vanilla essence
9 tbsp sugar
Pinch of salt
Handful of mixed nuts
1. Wash and boil apricots in a little water till soft. Peel, stone and mash to paste.

2. Combine together sugar, eggs and salt, pour in the milk and place on top of simmering water.

3. Cook the mixture stirring all the time till it coats the spoon.

4. Remove from the fire and mix in the apricots and essence.

Chill nicely and serve garnishing with nuts.

If baking in oven:

Place the baking fish in a larger pan filled with hot water and bake in a preheated 350 degree oven for 45 minutes, or until the point of a knife inserted in the middle comes out clean. Cool and unmold on a round platter.
