2 cups sugar
2 cups low fat milk powder
Few drops vanilla essence
1/4 cup flaked almonds, toasted
1. Put sugar in a large heavy based sauce pan with 1 cup of water and heat gently, stirring occassionally, until sugar is dissolved.

2. Bring to the boil, then boil over a medium flame until a few drops of mixture will form a soft ball in cold water.

3. Stir in milk powder and cook for 3-4 minutes more, stirring constantly, until mixture begins to dry on spoon.

4. Stir in vanilla.

5. Grease a pan with ghee and pour the mixture into the pan spread evenly.

6. Scatter almonds over top and press into surface.

7. Leave to cool slightly, then cut pieces into square or diamond shape.
