Lemon And Coriander Chicken Popular

4 chicken thighs, skinned
4 chicken drumsticks, skinned
60 ml ( 2 fl oz/1/4 cup) vegetable oil
5 cm (2 in) piece fresh root ginger, grated
4 cloves garlic, crushed
1 fresh green chilli, seeded and finely chopped
1/2 tsp turmeric
1 tsp ground cumin
1 tsp ground coriander
salt and cayenne pepper
grated peel and juice of 1 lemon
125 g (4 oz) fresh coriander leaves, chopped
coriander leaves and lemon slices to garnish
1. Wash chicken joints and pat dry with absorbent kitchen paper.
2. Heat oil in a large frying pan, add chicken, and fry, stirring frequently, until browned all over.
3. Remove from pan with a slotted spoon and set aside.
4. Add ginger and garlic to pan and fry for 1 minute.
5. Stir in chilli, turmeric, cumin and ground coriander and season with salt and cayenne pepper, then cook for 1 minute more.
6. Return chicken to pan, add 125 ml (4 fl oz/1/2 cup) water and lemon peel and juice.
7. Bring to the boil, then cover and cook over a medium heat for 25-30 minutes or until chicken is tender.
8. Stir in chopped coriander, then serve hot, garnished with fresh coriander leaves and lemon slices.

Serves 4.
