four 185 g ( 6 oz) boneless chicken breasts (fillets), skinned
2 tbsp vegetable oil
6 onions, finely chopped
3 cloves garlic, crushed
1 tsp ginger and garlic paste
5 cm (2 in) piece fresh root ginger, grated
1 tsp ground cumin
2 tsp Garam Masala
salt and pepper
3 tsp lemon juice
6 tbsp hot water
1 tsp soy sauce
1 tsp vinegar
Coriander leaves, finely chopped
7-8 green chillies, chopped
1. Wash chicken, pat dry with absorbent kitchen paper and slice thinly.
2. Marinate chicken with ginger-garlic paste, turmeric and salt.
3. Heat oil in a large frying fan, add onions and fry for 2-3 minutes, stirring, to soften.
4. Remove from pan with a slotted spoon.
5. Put chicken in pan and fry over a high heat, stirring frequently, for about 5 minutes or until browned all over.
6. Stir in garlic, ginger, cumin, say sauce, vinegar, coriander leaves, green chillies and garam masala and season with pepper.
7. Cook for 1 minute, then stir in onions, lemon juice and water.
8. Cover and cook over a low heat for about 10 minutes or until chicken is tender.

Serves 4.
