Curried Chicken Livers Popular

250 g (8 oz) chicken livers
2 tbsp vegetable oil
2 onions, finely sliced
3 cloves garlic, crushed
2 tsp Garam Masala
1/2 tsp turmeric
salt and pepper
6 tsp lemon juice
2 tbsp chopped fresh parsley
parsley sprigs, to garnish
1.Wash chicken livers and remove any green tinged parts. Set aside.

2. Heat oil in a frying pan, add onions and cook over a medium heat, stirring, for about 8 minutes, until soft and golden brown.

3. Stir in garlic, garam masala and turmeric and season with salt and pepper

4. Fry for 1 minute, then stir in chicken livers and fry for 5 minutes, stirring frequently, until livers are browned on outsides but still slightly pink in the centres.

5. Sprinkle with lemon juice and parsley.

Serve hot, garnished with sprigs of parsley

Serves 4.
