Chicken in Spicy Sauce Popular

8 chicken thighs, skinned
250 g (8 oz) can tomatoes, drained
6 tsp tomato puree(paste)
6 tsp chilli sauce
2 tsp sugar
3 tsp Garam Masala
6 tsp light soy sauce
5 cm (2 in) piece fresh root ginger, grated
2 cloves garlic, crushed
juice of 1 lime and 1 lemon
twists of lime and lemon, to garnish
1. Wash chicken and dry with absorbent kitchen paper.
2. Slash meaty parts 2 or 3 times. Place in a non-metal dish.
3. Put tomatoes, tomato puree (paste), chilli sauce, ginger, garlic and lime and lemon juices in a blender or food processor and process until smooth.
4. Pour over chicken, cover and leave in a cool place for 2-3 hours to allow chicken to absorb flavours.
5. Preheat oven to 190C (375F/Gas 5).
6. Put chicken and the sauce in a toasting tin and cook, uncovered, for 45-50 minutes, basting with sauce 2 or 3 times, until tender and cooked.
7. Serve hot, garnished with lime and lemon twists.

Serves 4.
