Cauliflower Biryani Popular

1 cup Basmati Rice
2 Onions, chopped lengthwise
6 green chillies, chopped lengthwise
1 medium cauliflower, cut into flowerets
1/4 cup yogurt
Salt as required
2 tbsp grated fresh coconut
2 tsp ghee
10 cashewnuts
Few curry leaves
1 bunch coriander leaves, chopped
1 lemon, cut into 4 pieces
1/2 tsp coriander and cumin powder
1 sp Garam masala
1/2 tsp mustard seeds
Pinch of asafoetida
1/4 tsp turmeric powder
3tbsp Oil
1. Wash rice and soak for 15 minutes.

2. Heat oil in a pan and add mustard seeds. when they splutter add green chillies, asafoetida, curry leaves and cashewnuts. Fry for few minutes.

3. Add onions, cauliflower pieces and fry for few minutes.

4. Remove water from rice and add to the above mixture and fry for 2 minutes.

5. Add hot water to this and add salt, turmeric powder. When they get boiled add yogurt, coriander-cumin powder and garam masala powder.

6. Simmer the stove and close the lid tightly and cook for 15 to 20 minutes.

7. When rice is cooked add ghee and mix well and remove from stove.

Garnish with grated coconut and chopped coriander leaves.

Serve hot hot rice with lemon pieces.
